Merry Christmas Everyone!

As our first Christmas alone without all of our family, it was pretty successful but very quiet. While the quietness was relaxing, it wasn't the same without seeing everyone! Madi had a blast opening presents and playing with her new toys. I enjoyed cooking a nice dinner for everyone, and Jeremy enjoyed playing with Madi and eating the good food haha! Peppermint Plate

This is  fun project to do with your children, friends, and family! My husband and I made a peppermint plate for Santa's cookies. Madi didn't take part in this because she was already in bed but I can't wait to show her in the morning :).

So it is super easy. Just get a big bag of peppermints, any color you want.

Arrange them on a cookie sheet on wax paper in any design you like. (We were going to make a Christmas tree but couldn't find green peppermints anywhere.)

Preheat oven to 350 and bake for 8-9 minutes!

When it is done let cool for atleast 10 minutes.

Here is ours :) We did a simple round plate this year.

Cheesy Broccoli Chicken Casserole

So this is a super easy recipe for a very cheesy, yummy, casserole!
What you will need:

3 chicken breasts
1 bag of rice (I use Uncle Ben's boil in a bag rice)
1 can cream of mushroom or chicken
1 bag broccoli
Velveeta cheese
Salt and pepper

First boil your chicken. I usually just throw them in still frozen and boil about 40 minutes.



When chicken is done, just throw the bag of rice in the still boiling water for about 10 min. You can use any rice you want. The boil in a bag is just easier. So whatever rice you use, cook it at this time :)



While the rice is cooking just pop the broccoli in the microwave and steam it. Again, I go the easy route and get the steam in a bag broccoli. This is what I use...



Once everything is cooked shred the chicken and mix all ingredients together with about 8oz of velveeta cheese (cubed). Salt and pepper to taste.



Pour into a buttered casserole dish and bake at 350 degrees for about 25-30 min. If you like a lot of cheese like me then you can add a few more slices of velveeta to the top of the casserole before you bake. Your end product will look similar to this....

Sausage Balls

Ok. I see all these posts and recipes for sausage balls and they all have too many ingredients and do not taste near as good as my easy, 3 ingredient sausage balls. I have tried the others to compare and there really is just no comparison. So here it is. The EASIEST, YUMMIEST snack. We eat them for breakfast a lot and I make them for football games.

All you need:

1 pack of ground sausage (the tube). *The BEST is Tennessee Pride but Jimmy Dean is my 2nd pick.
2 cups of shredded cheddar cheese
1 box of bisquick (I have also used hungrey jack pancake mix and its just as good)


I put the sausage and cheese in a big bowl, then dump in some bisquick. I don't measure it. Just add enough to make the sausage not real sticky (I would guess about 2 cups). Mix well together with your hands. You will have some cheese and bisquick left over in the bottom of the bowl. That is ok.
Roll into quarter size balls (or however big/small you want them)
Bake at 350 for about 25-30 min.

An Early Christmas

So Madi was wanting to get up and down on the furniture today. She was so mad when we wouldn't let her. Ms. daredevil will just walk right off the couch if we let her. So today we decided to give her an early present! She LOVES it!! Laughing and giggling while jumping up and down on her little chair is the cutest thing! Here are a few pics we snapped :)

A little about us.


My family. Yes, this is us...at an Ugly Christmas sweater party! :) It's almost Christmas and I can't believe this is Madi's 2nd one. She is growing so much everyday. We are all still living in California and hoping to get stationed back on the east coast some time next year so we can be closer to family.
